HOW TO MAKE ARBI | FRIED MASALA ARBI | SINDHI STYLE ARBI

Arbi is an amazing thing which can be made in numerous ways. I personally love the masala arbi version of it. There might be variation in different regions of the country to make it. I am going to tell you how I made the sindhi version of it.

You can make various dishes using arbi such as schezwan arbi, arbi chaat and many other such dishes. Arbi in all is my favourite. And i always find ways to make something different from it.

However, the process of making sindhi style fried arbi is not that complex.  It is very easy to make and so tasty that you would’nt be able to keep your self from licking your fingers at the end!😅

The basic step to make arbi let it be any dish is to boil it. Raw arbi is very hard as you know so it will take a lot longer to cook. Once you have boiled it you are half way through the process.

Then you have to peel and fry them in hot oil until they turn golden in colour. Let them cool a bit and then gently press them to flatten them a bit. You can also cut it lengthwise and fry them. Or cut it in rounds or whatever you prefer.

Once that it done. Coat them with spices and pan fry them for about 2 to 3 minutes at each side.

Ingredients:
1/2 kg arbi
Salt to taste
2 tablespoon red chilly powder(adjust according to preference)
1 teaspoon amchur powder or raw mango powder
3 tablespoon coriander powder
1 tablespoon garam masala powder
1/4 teaspoon turmeric powder
2 cloves of garlic finely chopped
Oil for frying

Method:
1. Boil and peel the arbi and let them cool down a little bit
2. Fry them in hot oil. Make sure the oil is hot otherwise arbi will break into pieces and not stay firm
3. Fry them until golden in colour
4. Gently press them with the palm of your hand to flatten it. Dont press too hard.
5. Mix all the spices mentioned above in a small plate and coat the arbi with spices
6. Add oil in a pan and pan fry them for 2 minutes at each side.
7. Sprinkle chopped garlic over the arbis while pan frying them.

And thats done!
Notes:
1. If you want to make round arbi then cut rounds before frying them
2. You do not need to coat the arbi before pan frying them if making round or any other shape.
3. You can also cut a slit from the side and fill the spices in it for extra flavour.
4. You can skip out garlic
5. If you add salt while boiling then add very little salt while coating
